Recipe: Pork & Holy Basil Stir-fry (Pad Kra Pao)

Pork & Holy Basil Stir-fry

Ingredients

  • 3 tbsp vegetable oil

  • 2 shallots (thinly sliced)

  • 7 cloves garlic (sliced)

  • 3 small red chillies (deseeded, if desired, and thinly sliced)

  • 500g Ocado British Pork Mince 12% Fat

  • 2 tsp Thai Taste Palm Sugar

  • 2 tbsp Tiparos Fish Sauce 

  • 2tbsp Healthy Boy Mushroom Soy Sauce  

  • 2 tbsp Healthy Boy Oyster Sauce 

  • 80ml chicken or vegetable stock 

  • Bunch of holy basil leaves (or basil if holy basil unavailable)

  • 4 x Ocado Large Free Range Eggs

  • Royal Umbrella Thai Hom Mali Jasmine Rice to serve

Method

  1. In a wok over medium-high heat, add the oil, shallots and garlic, and fry for 3 minutes. 

  2. Add the chillies and cook for another minute. 

  3. Increase the heat to high and add the ground pork, breaking it up into small bits and allowing it to crisp up.

  4. Add the sugar, fish sauce, soy sauce, and oyster sauce. 

  5. Stir-fry for another minute and deglaze the pan with the stock. Because your pan is over high heat, the liquid should cook off very quickly. 

  6. Add the basil, and stir-fry until wilted. 

  7. Serve over rice

  8. Fry 4 eggs and add to each dish
